As Restaurant Manager, he oversees the floor with clarity shaping the service style, curating the wine and spirits selection and building a team rooted in excellence. Benito, a certified sommelier draws from his experience at standout properties like W Rome, Hotel Hassler, and The St. Regis Doha. With his intuitive approach, he ensures the EDITION's signature service of elegance and guest-focused care is delivered.

With experience in five-star hotels and Michelin-starred restaurants, including W Rome and Grand Hotel Via Veneto, he approaches service with attention to detail. A certified sommelier trained by Fondazione Italiana Sommelier, Aires curates thoughtful wine pairings that add depth and personality to each dining experience. His diverse background in hospitality allows him to create moments that feel genuinely personal.
