Born of the Lazio countryside, Cacio e Pepe was once the humble meal of shepherds, Pecorino Romano, black pepper, dried pasta. At Anima, this elemental recipe is reborn. Chef Antonio folds tender shrimp into a creamy, pepper-spiked sauce, creating a quiet contrast of land and sea, simplicity and sophistication.​

This dish is Chef Antonio’s homecoming. Using pomodorini gialli sweet, golden cherry tomatoes grown in the volcanic soil of Mount Vesuvius, he crafts a sauce both delicate and bold. Bright with flavor, low in acidity, it’s a whisper of Naples on every fork.
