Our sommelier curates a wine list to complement every dish and moment, while EDITION's signature service brings a balance of intimacy and ease.​Tucked within the city's vibrant center, our hidden courtyard, home to over 400 flourishing plants offers a serene escape where La Dolce Vita unfolds naturally.​

The Chartreuse Room is an intimate, design-led dining space where plush velvet seating meets the energy of an open kitchen.

Antonio Gentile

Antonio Gentile is an Italian chef from Campania, born in Ercolano (Naples) in 1986, known for a Mediterranean cuisine that blends contemporary techniques with strong traditional roots and a deep respect for high-quality ingredients.

The Chef's professional journey includes training and experience in prestigious kitchens, working alongside renowned chefs such as Heinz Beck and Pierfranco Ferrara.

His culinary style is appreciated for its balance between tradition and innovation, celebrating both land and sea through a modern Mediterranean lens that reflects his Campanian heritage and international experience.

Today, he is the Execute Chef at Anima, signature restaurant of The Rome EDITION, where he continues to develop his personal culinary vision, centered on creativity and seasonality.
